How to Make Roasted Tomato Sauce

Roasting the tomatoes before using them in a sauce gives them a lot of added flavor! Use the sauce as written for pizza, add a bit more olive oil for a pasta sauce, or less oil for a great veggie dip.


1. Take a clamshell of washed grape or cherry tomatoes and season lightly with olive oil, garlic powder, salt and pepper.


2. Roast tomatoes in a grill basket (or in a 400 degree oven) for about 7 minutes.


3. You know when the tomatoes are done when the skin begins to wrinkle and they look like they are going to implode.

4. Mash the tomatoes with a fork. Mix with 2 tbsp tomato paste and 2 tbsp olive oil.


5. Sauce will remain chunky because of the roasted tomato skins.
