		<description><![CDATA[Sweet potatoes? They make great fries, or you can wrap it in foil and roast it for a bit, and then top it with black beans and salsa. You can also use them in stews, but that&#039;s more of a fall idea as I doubt you want the stove on for that long right now :) You could also cube them and make them into home fries with scrambled eggs... too many possibilities! I have a few posts - sweet potato fries, and scrambled eggs with home fries - if you check out the recipe page. Hope that helps!

Tip for working with them (unless you are gonna roast it): steam them for a bit first (either in the microwave or over the stove) and then let them cool all the way. That makes them super easy to peel and also helps them to cook through a little more evenly.]]></description>
